This coffee is decaffeinated by Mountain Water Process which involves sourcing natural mountain water from Pico De Orizaba soaking & washed the coffee numerous, times & then water is passed through a caffeine filter before being re-introduced to the coffee. This natural process decaffeination leaves a full flavoured coffee without any chemical residue.
The Chiapas region is home to Mexico´s largest & oldest coffee farms, some are more than a hundred years old. With the influence of the Atlantic Ocean on one side & the Pacific Ocean on the other side, the mountain slopes of the Sierra Madre create special microclimates for coffee farming.
